Mini Cheesy Chicken Pitas and Tasty Tuesday Linkup

This is one of those recipes that just sort of happened when I was making lunch one day. I didn't plan it out, but it was delicious and the mini pitas just make it that much more fun. This would work well as I full size pita or a sandwich too.

Ingredients:
1 T butter
half stalk celery, diced
1 T flour
1 C milk
2 C shredded chicken
1/2 C italian blend cheese (mozzarella is fine)
mini pitas
baby kale
1 medium tomato, seeded and diced


Place butter and celery into a medium sized saucepan over medium/high heat.
Allow butter to melt and celery to soften.
Stir in flour. The mixture should be thick and is likely to look a little gritty.
Whisk in milk until smooth and bring to light boil 4-5 minutes or until sauce thickens.
Stir in chicken and cheese and allow to cook until warmed through.
Assemble pitas by placing kale in pita, adding chicken and topping with tomatoes.
Enjoy!
