Last week, I had to improvise a lot to make the recipes work for the ingredients I had. Surprisingly enough, we found some meals the kids were super excited about, so I'm going to repeat some of them again.

ReplyDeleteDH's favorite inexpensive dish is chicken croquettes with homemade white gravy (meat gleaned from a previously roasted chicken dinner, mixed with equal parts or more of mashed potatoes, shaped into meatballs, dipped in egg, rolled in bread crumbs, brushed with olive oil & baked)
Thank you for doing this! It's already helped me think about my meal planning differently. I've tried a lower grocery budget several times before and didn't do very well. I don't know if part of it is that I live in southern California or what but $85 a week has been the lowest I've been able to go and it was horrible. I ended up giving up and reverting to my old habits :( But I'm going to try again and maybe this time I'll succeed! :)
