Meal Plan Monday: October 13, 2014

David just started a new job last week, hurray! His new schedule is a unit day schedule, so he works 24 hours on and 48 hours off. He'll most likely continue with unit day schedules until he retires. This translates to 48-72 hour work weeks on top of his busy full time school schedule, so basically we're not going to see him much for awhile. This means I can make more of my favorite foods and he can't complain because he probably won't be eating them anyway. He'll primarily be living off of sandwiches and other lunchbox items.
We're really excited for this new job even though we know the schedule will be difficult, because the pay will dramatically reduce the amount of time until we reach some of our bigger financial goals.

So this week we're eating:
  • Spaghetti with Meatballs and a side salad
  • Sweet Potato Chili (recipe coming soon) with Cornbread Muffins 
  • Navajo Tacos (using leftover sweet potato chili)
  • Cauliflower Macaroni and Cheese
  • Chicken, Potato, and Green Bean Bake.
  • Pork Chops and Caramelized Brussel Sprouts
  • Pepperoni Pizza with Whole Wheat Crust

  1. I know how hard it can be when one's partner is rarely home. My partner, Marcus, works FT for the county and is half-way through his last term of college. Part-time is not an option if he wants to keep his new, awesome job (he does!!!), so he's stuck. Before he landed the web dev job, one of his PT jobs was taking care of a quadriplegic gentleman. They became friends...so Marcus still pulls a 24-hr shift caring for him, once every four weeks. He's exhausted and misses his family. We miss him just as much...but everyone is so cranky (especially my pregnant self) that I'm amazed he wants to come home *sigh* It WILL get better!

    A huge congrats on the new job that will allow your family to reach its goals faster! Hang in there :-)
